Olive wholegrain bread

What a wonderful weekend! As mentioned in my post last week, we have been blessed with great weather, and we made the most of it. We went to the beach with some friends, it took us quite some time to find a good spot as we wanted to avoid the crowd. Finally we did find what we were looking for, a semi deserted beach. To reach it we had to walk for a good 25 minutes, through the dunes that protect The Netherlands from being flooded. So not only beautiful to walk but also vital for this country. The temperature was so high that we also managed to swim. I am not sure how many of you are familiar with the North Sea, but it is pretty cold, as the name may suggest :)  the temperature was about 17 C (62 F), nevertheless it was fun. You just need to dive in with little hesitation, the more you think of it and the less likely you are going to do it. The afternoon was cut short by the wind, which towards the end became pretty strong and all covered in sand, we decided to call it a day :)

When we got back home we were happy to see our neighbor holding her new born child. She is a mum! The funny thing is that we do not know our neighbor, she’s just living opposite us. We live in the center, here houses tend to be quite close to each other, and most importantly people don’t seem to have a love relationship with curtains. In the sense that most of the people here do not have them, which makes it close to impossible not to become a voyeur.

The neighbours that live opposite us face our living room and dining area, which means that each time we are in the living room we can see them. They are a couple, a young couple, mid 30s. A few months ago we noticed the belly and realized she was pregnant, we saw the belly growing for the last few months, and last night we were happy too see her holding her baby. Good luck to them!!

Once you go bread you never go back!

Today I want to go back to bread. This time green olives are added into the bread baked from wholegrain flour. It has more flavor and it is more healthy compared to the standard white bread. Have a good Monday!

Olive wholegrain dark bread

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 3 hours, 10 minutes

Yield: 1 kg of bread

Ingredients

  • Wholegrain wheat / rye flour: 1 kg (2 pounds)
  • (Fast action) Dried yeast: 15 g (1/2 oz)
  • Olive oil: 30 ml (2 tbsp)
  • Green olives: 300 g (21 oz), halved
  • Water: about 600 ml (2 1/2 cup)

Method

  1. Mix all the ingredients together by hand or electric dough mixer
  2. Leave the dough to rise for 2 hours
  3. Knead back the dough on floured or oiled surface, shape the dough into small pieces if wanted, leave the dough to rise for 30 mins (the dough should double in size)
  4. Pre-heat an oven in 220 C (425 F), place a bowl of water in to create steamed air in the oven
  5. Bake the bread for 30 mins and let cool in wired rack
