This is a salmon and strawberry starter, it is done with courgette and mint. It is fresh and has a true summer feeling. We also added some lime for the extra kick
The apartment where we live is cute, we like it. We like it a lot in fact. We bought it last year, we made some renovations and now it is pretty much how we wanted it. The location is great as it is right in the centre of Amsterdam, close to all we need. All of this has not passed unnoticed to our close friends. I lived in London for 8 years and I had very few people coming and visit, somehow London did not appeal to my crowd as much as Amsterdam does.
I have been living in this city for almost 3 years and the quantity of people that came through our door is very high and are very happy that is the case. I love having friends around, I love taking care of them when visiting.
Like in every holiday resort we also have peak season and low season. We are now entering the peak season. Although we will try to be a more efficient this year. Last year we had guests every weekend from August to October. It was mad. As much as I love people coming over, that was a bit too much. We underestimated how stressful that was going to be.
Our first guests for this Summer 2015 are coming on Thursday: Roberta and Laura. They live in London and I have known them for quite a long time. We are taking them to a music festival called Milkshake, a house music sort of festival. It should be fun. So let the guest season begin!
The credit for the recipe of today goes to my mamma, she is very creative in the kitchen and she is my source of inspiration.
We had a dinner last night and she recommended this cute and simple starter. I am so glad I did it. It went down very well!!
Ingredients
- Salmon: 200 g (7 oz)
- Courgette: 2
- Strawberry: 16 small
- Mint: 8 leaves
- Lime: 1
- Dried rosemary: 2 tsp
- Sea salt: a pinch
- Ground pepper: a dash
Method
- Salt the salmon, add the rosemary, pepper and steam until cooked. Set aside to cool
- Grate the courgette
- Cut the strawberries in quarters
- Flake the salmon, add the courgette, the mint, the strawberry
- In the mixture squeeze the lime and grate half of the lime zest
- Use pastry ring or ramekin to shape
- Complete by adding some sea salt, pepper and extra virgin olive oil
