If you have some egg yolks left, this Lime Orange Curd with Berries could be the solution. A simple and yet tasty dessert, that takes a few minutes to make.
Our holiday is approaching and I cannot wait. We have been checking the temperature over the South of Italy and it looks seriously hot, which is fine on paper, but I know I won’t enjoy the heat much after a while. I grew up in Asia and over there folks are afraid of the sun, which is ironic, especially in a tropical country. My mum when visited Europe looked for shades everywhere we went and always had an umbrella on hand with her, in case it was too hot, not rainy
My skin has changed a lot in the last ten years to become quite sensitive with the sun. The sun cream I use has very high protection (SPF 50) and I will not spend hours under the sun for sure. I have noticed Europeans are much different, in Italy or Spain they love roasting under the sun for hours, at times with very low protection.
I am not sure if it’s my skin that is changing or most likely it is the sun. I become red much more easily, and I experienced some sun irritation a couple of times. I rather be safe.
It was funny when a couple of years ago we visited Capri, which is a jewel island off the Amalfi coast. We were walking up the hill to go and visit Villa Jovis (Tiberius, the Roman emperor also appreciated the beauty of the island), but it was so hot that I also had to buy an umbrella and walk around with it. Sadly the one we found, as you can imagine not many shops sell umbrellas there, was with bright purple flowers. You can only guess how the locals looked at us, so funny and a bit embarrassing
As you may have noticed I like cakes and I like cakes a lot. In the summer of course, when hot I indulge in mixing and matching all the beautiful fruits summer has got to offer. That also helps to release the heat and to enjoy my time in the shade.
The dessert I put together today is, again, very easy and you can make it at the same time as the Pavlova, you only need egg yolks and berries, whereas with our pavlova you need the egg whites and berries. Two cakes at once. Perfect!
Ingredients
- Egg yolk: 6
- Sugar: 150 g (3/4 cup)
- Lime juice: 60 ml (1/4 cup)
- Orange juice: 125 ml (1/2 cup)
- Lime zest: 1
- Orange zest: 1
- Butter: 60 g (1/4 cup)
- Strawberry: 100 g (3.5 oz)
- Raspberry: 100 g (3.5 oz)
- Blackberry: 100 g (3.5 oz)
- Grind pistachio: 4 tbsp
- Mint (optional): a few leaves
Method
- In a sauce pan, whisk the egg yolks, sugar, lime and orange juice and cook in medium heat while contantly whisking for about 5 minutes then off heat and add lemon zest, orange zest and butter, whisk until combined
- Cover the surface of the curd with folie to prevent skin forming and let chill
- Finishing the dish: Place 1/4 portion of the lime orange curd in a small cup, add a few berries and top with a bit of grind pistachio and mint leaves
